Breadfruit (Artocarpus altilis)
.

Comes from South East Asia. An important starch staple in the Pacific. Flesh is used in the same way as potato. Large green fruit. Best served as deep fried chips. Can be cooked from frozen. Keeps well.

Climate Requirements

Hot tropical lowlands. These trees are very cold sensitive.

Culture

The trees are propogated from suckers as most varieties do not produce seed. Governor Bligh had to spend 6 months in Tahiti collecting and establishing suckers in pots to transport to the Caribbean, which led to the 'Mutiny on the Bounty'.

Harvesting

Harvest is between January and June. Usually some fruit on trees most of the year. Pick when firm and green if you want to use as a starch vegetable. Or you can leave the fruit until a later stage, when the starch turns to sugar, and the fruit has a sweet custard taste

Marketing Notes

Able to be transported easily to markets when picked at the green stage. The main market is Pacific indigenous communities in the capital cities.

 

Food Preparation

Baked over hot coals is how breadfruit is usually eaten in the Pacific. You can cook Breadfruit in the same way as potato. The most popular way of eating it at Cape Trib is as thickly sliced chips, deepfried and then served with Lime Pickle as a dip.
