Durians
500
gms sugar

Instructions
Place
the Durian pulp in a saucepan, and heat. Add
sugar and mix well. Continue
stirring until the mixture coagulates. Shape
mixture into small cakes and wrap with a wrapping which 'breathes'.
The
cakes will keep for a year.
[We have eaten Durian Cake in Thailand and it is
quite good, but we have never had enough Durian to spare to try
this our ourselves. Maybe next season!]
Update - March 2005 - We have finally tried it and
are not too impressed.
